They have thousands of years worth of magical crap and there's nothing there that can make the vampire chick human again?

Hell, given the connection between vampires and Judas, it seems like taking a drink from the Holy Grail might do the trick. If not that, it seems like they should have something else that would work.

I think that, because she was 403 and outlived her human life expectancy, even if they'd cured her she'd just catch up to being a dead woman.

I don't think that was the point at all. She had lived for 400 years, she had allready had more than a full life and wanted to die, she wanted rest. When she fullfilled her destiny(killing Dracula or whatever it know was) she was ready for the big sleep.

You can't deal with it by using magic. It has to be battled more realistic, with modern science.
Mainly vampirism is a lack of red blood cells, because a vampire can't produce its own. So what is required, is to find a way for a vampires organism to produce its own red blood cells.
When that is done, then you have to battle the vampires craving for blood mentally, because it will now be just like a drug addict, who has just gone thrue detox.
