He said are all firemen that way. He didn’t say are firemen in the movie that way.
It’s just that the op asked this question because of this particular scene in the movie not really as a general question about firemen or even Frenchmen.
A female serial killer wanted by the police hides in plain sight as a guy. The missing son of an alpha male fireman. She passes for a guy. During a moment at the station they all drink beer and listen to great music and start dancing. At first, she/he mingles and dances with them just like a guy but then her moves slowly become feminine. And then she gyrates into a full on stripper using the fire truck and pole. Seeing the look on the firemen’s faces and reaction to him/her was priceless and very uncomfortable. And that’s the reason behind the op’s question.

Funny, I never knew it, but my nephew came out as gay and his number one career ambition is to become a fireman. I think it's the all men living and bunking together.
