OK I can accept that there's magic and all, and that it affects the physical world but howcome the beams from those dishes on the buildings are not visible to everyone outside of the conflict of the sorcerer and company?

Did ordinary people see the flying statue things?

As far as I can determine, non-sorcerers can only see the effects of magic, not magical energy itself. Therefore, we would see flying statues and such, but not beams from the dishes, magic fire en route to its target, or the smoke of sorcerers as their bodies "dissolve" into the Grimhold or Chinese urn.

Yes, very. It would be like an action scene before the special effects are added.
