Why did the gangsters have to burn that guy in the tire and shoot that girl in the head?...I didn't get that part....why they had to be killed.

One day Matias could have squeeze the information out of them in order to grab Baiano, so Baino prefers to have them killed before they do that. As for the way they are getting killed, apart from being a dramatic and impressive scene to put in a movie, it could also be a warning to the potential "traitors" in the gang. Something like : "you fool around with the cops on our teritory, you get burnt alive and your woman gets a bullet in her head"
