Gerry is an ex-UN official, who's job was going into war zones and they state he's had experience working with these scenarios. So, dude is used to combat, being aware, observant, and has likely been in the middle of a deadly outbreak.
Here's the breakdown on how he knew they turned in 12 seconds:
We're first introduced to Subway Steve (Connie's stuffed toy that counts to x number when that x train reaches the station, in this case Train Number 12), in the very beginning at the breakfast scene. She squeezes him, or otherwise activates his audio, and you hear him announce that Train 12 is in the station and he begins counting. Albeit, this is happening in the background and easy to miss if you're not very observant.
Then, there's the scene after they've crashed the car and are running for the RV, and Gerry is looking over his shoulder at the guy from the minivan that has been attacked and is in the process of turning. Subway Steve was dropped, Gerry picked him up, and Subway Steve's audio had been triggered and he started counting to 12. Gerry's former job required observational skills akin to that of a Hawk. So he was listening to the countdown, and at the same time observing the guy who was turning. When Subway Steve got to 12, the guy finally turned, and began attacking the minivan.
This is how Gerry knows that they turn in 12 seconds. His job experience has instilled in him acute observational skills, that go far beyond the average persons - this is how he noticed the people that the Zombies were avoiding. Like the drunk in the alley, the boy with cancer in Israel, the old man in Israel etc.
