Even if he got it shaved up and smoked quickly, which was clearly impossible in the summer heat (maggots) he had no means of preserving 200-300 pounds of meat long-term. He should have stuck to small rodents which can be cooked and consumed same day. Of course he learned this in hindsight, but surely he would have foreseen such a failed result. He was already at the starving point. He was too confident and thought he could smoke the moose meat, which is the advice he got from one of his friends back in South Dakota prior to his journey north. It was bad advice, obviously.
As for sticking to small rodents, he had no problem finding rodents to eat. But a human can't live on those alone, as they provide no carbohydrates or fats, strictly lean protein. Which leads to what is called "Rabbit Starvation" or protein poisoning. Ultimately, that's what killed him.

He poisoned himself by eating the wrong seeds, but even the right seeds wouldn't have been enough. I agree he needed more fats and carbs too. Should have brought a tub of Crisco and more rice.

Yes, the movie implies that he died as a result of eating the seeds. In real life, that was not the case. The seeds were harmless, but had little nutritive value. You're right that what he needed was more fats (he could have lived for a long time on protein and fat alone), as well as carbs.
The great unanswered question, or one of them, is why didn't he use his fishing gear and catch the salmon that were abundant in the streams and rivers at that time? His "diary" (which is essentially just a list of the food items he caught or gathered) makes no mention of fish. Although fish are low in carbs, they are high in omega-3 fats and he would not have starved.

Of course, the correct answer is he was living a Disney Wilderness adventure and had no clue what he was doing. As much as I liked the movie, most of the people calling it "great" are people who also don't understand what he was getting himself into and how foolish it was. It's a very romantic notion to cast off your urban chains and rough it in the wilds like in days of yore, but reality is a bitch if you've never taught yourself to forage, hunt and fish.

Even if he was ill-equipped to go into the wild, he didn't do much but exult when he got there. After getting the advice about caring for the meat, he still had no place prepared if he did manage to bring an animal down, treat it, have a covering ready, etc. Plus having a "moment" washing up and contemplating. If someone who knows how says "move fast", you move fast. You can contemplate it later.
