Well to be fair, it didn't really, because the writers fudged the law to have a 'happy' ending. Double jeopardy pertains to the crime not the charge, and he was acquitted. The reason we didn't see him sentenced is because in reality he walked out of court five minutes later, leaving the DA with a multi-million dollar lawsuit on their hands.

Double jeopardy attached to the crime of attempted murder. She died afterwards, so it is in fact possible to bring a charge of murder, which has the additional element that the victim died.

The moral is when you win, don't gloat and don't rub it into your opponent's face. It tends to keep them focused on you and getting revenge.
