Why was Alec Baldwin so adamant about not shaving it off?

Because Alec Baldwin had gotten fat and he felt that a beard would hide his jowls.
A lot of guys have full beards to hide double chins or receding chins or whatever else but in this case I do believe you're getting Mister Apeman confused with Bruce Willis..
