why was he first wearing short hair and then suddenly became long-haired


I think he is better looking with long hair but truly I don't understand why they changed his hair. Couldn't he be wearing long hair since the beginning?

The long hair was part of his disguise, so that he would look more pirate like to fit in on the ship as the captains nephew.

You didn't see the part when Captain Shakespeare takes them into his cabin, pretending to ravage Yvaine? After some talking, he starts to dress and groom Tristan's hair and it magically grows to shoulder length. It was to be his disguise so the Captain could pretend Tristan was his nephew or something.

Yes, I thought this was (yet another) way this film brilliantly captured the differences between the magical world of Stormhold & real-life England. He looked so much more mature, dashing & confident--better suited to his part as the pirate nephew, yes, but more so the hero--with "Whoopsie"s magical transformation of Tristan

As to "Why," it was explained as being part of his disguise. The sailors thought that Tristan had been thrown overboard, so the Captain was making Tristan look like someone else.
