I know Star Wars was not a trilogy but you could have gave mention. Batman Bourne and the Godfather are spot on.

Dunno about full trilogies but my three favorite part 3s are

Bourne Ultimatum, Goldfinger and, if it counts, The Good, The Bad, and the Ugly

In no particular order:

The Godfather
Bourne
Star Wars Episodes IV, V, and VI
Back to the Future

I would list Lord of the Rings, but I don't consider it to be a trilogy per se.

LOTR return of the king had too many endings

Dark Knight Rises plot has more holes than swiss cheese

Indiana Jones is not a trilogy

Godfather part III was terrible

Pirates of the Caribbean and Hannibal Lecter aren't trilogies. Both of them have four parts and a potential 5th in the making. The original Indiana Jones like Star Wars could be taken as a trilogy.
