... it will look odd to have guest hosts in Craig's chair and so on with the knowledge he's never coming back now. Will they make a few small changes to the scenery?

I was also wondering this. I wonder if they will wheel the platform back into the small studio and use a simple backdrop to build a new set for James Corden in the big studio.

Also, what will they use for an opening theme?

They have tapings scheduled to start January 5th so basically, two weeks of reruns.
