Exactly, it's like a dream that feels like hours but is only a few minutes if that.
In our conciousness time is very flexible and as such, he could very well have lived the 6 hours in the film in a 20 minute vision or less.
Also as can be seen when he's making his getaway from the casino, as well as him dodging multiple bullets. The perception of his visions, or the perception of the future, is done in far far less than half a second.
So we are talking a ratio of perception of his visions to realtime in the thousands. 1 second of a vision can be 1000 seconds in the real world.
Cage pausing was probably due to the film limitations and also the limitations of his friends (they are only so comfortable walking at a certain speed armed). He also 'froze' in those moments because he had experienced a vision of being exploded or shot. It has a psychic toll on him which he needs to consciously process in the real world. This is less the case if the shot is non fatal or he is sufficiently motivated. (End scene where he dodges 10 bullets in seconds)
Also I think the fact he can see so far ahead into Biels future is romantic. Just shows how much he cares for her. I say this cause there is a strong case that Cages ability is on certain level unconscious, basically whenever something concerning his future is about to happen, he sees it. This could be as little as someone talking about him, he can see the future of those actions.
