Who is McPhee?
Was she their mother? I still can't figure out who she is

She's a nanny. Nanny McPhee?
If you don't understand that term, it's basically like a babysitter who lives with the family she's looking after.

But she seems to know the family, and talks to the chair (representing the dead mum).
I expect she is a magical creature, her face changing as the kids get better. Knowing majic etc. Still watching the movie for the first time though.

She has a strong recemblance to Mary Poppins, a magical nanny who shows up when a family needs her. She can see what is needed to be seen, like the names of the kids, and that the father is a sorrowful widower.

I think she's a guardian angel.
She is a magical nanny who has been sent by the spirit of the children's mother to look after her children and sort out their behavioural problems. I think!
Think of how Mary Poppins wasn't ever sent for, but came because she was needed. It's the same with Nanny McPhee, she's magical and comes when she's needed.
She is not their mother or anything like that.

At the wedding when mcPhee is finally all "normal", I got the idea that maybe she was some sorta spirit ,djinn, or recently dead who had to lift a curse or make up for bad karma by completing 5 tasks which were the 5 lessons. An angel who had to earn wings type thing. It was two tasks or deeds in one, the children learn the lessons, McPhee has the curse lifted. Maybe she had been a bad parent or bad kid. Might explain why she had such a boig smile at the end. Youcan throw in something about the marriage if you want, she had to pave the way for true love or social equality or somethin. Or she's an avenging angel, Mrs Quickly and Aunt Adelaide got a come uppance.
Or.... it's a movie, a light hearted, light weight entertainment. She was a character in the movie, what does it matter what she was, sit back, be entertained.
