She was serving orange juice and cereal to Brendan in what appeared to be a very bizarre environment happening right under her nose in her home. What was up with that?

While this is a straight-faced noir, it realizes the HS setting is a bit unusual. When Brendan tells the VP "you can suspend me!" and that bit about kicking in the homeroom door, it's humorous even though they are playing it straight.
This was one of the few scenes where Brick went for straight up laughs. She was simply a normal HS movie mom wandering into a completely different genre.
As for realism, plenty of kids in HS got drunk or sold drugs with their parents around. Not great parents, mind you, but it definitely happens.

My take was that she basically knew what was going on, but tolerated it. She needed the money.
