The movie leaves that open. In my fanfic, Ginger's carcass rotted away within 90 minutes and there was nothing left but residue.
That has to be what happened. Otherwise, what happened to the carcass of the Beast of Baily Downs? It decayed the same way.
I was once obsessed with the Ginger Snaps series, but forgive my lack of clear memory. I remember reading that Pam, the girls' mother turned herself in to the police and took the blame for Trina's murder. I don't know if it was a planned scene that never got filmed or a deleted scene that never made it on to the DVD.
That pretty much only leaves Henry, the girls' practical zombie of a father, to discover the corpse.
As for the corpse rotting to nothing in a short time, that's an interesting theory but one that I find unlikely. Lycanthropy in the GS series is far from magical, they die like any animal. As for the original wolf that Sam hit and killed, we don't know what happended to the corpse. Even if Sam simply left it in the road it could have been taken to be yet another, albeit somewhat large, dead dog killed by the 'best of Bailey Downs'.
"Unlikely" is a funny thing to say about anything in a fantasy- horror series. Though you can say it's unlikely the writer and director thought of that because they weren't looking to make a series with the first one.
Far from magical? "Far" is a relative word. It definitely wasn't natural. Also, human ignorance of it was odd, unless it has some way to hide itself.
With Pamela in police custody for taking the fall for Trina's murder and their dad Henry having an affair (I think it was implied or it was a deleted scene), I'm not sure anyone even went home.
I like the theory about the corpse rotting. One random headcanon is that Ginger did have a funeral of some kind, but her name was given to some Jane Doe in the town who became a victim of the beast. It's probably not likely, but with Jason being a considerable threat who knows.

Or a victim of Ginger. Did you catch the shot that told you she killed Trina's dog, Morley? I'm guessing about what might have happened as Ginger went to school p*ssed off that last morning. It's a subject of fan fiction. Was that coat in the school hallway really hers?
(And then we get to continuity error, when Brigitte finds her Mr. Wayne's room, the coat is gone and where did Ginger's cloths come from?)
I would throw in the original beast that Sam ran over, but given how it was killed off early on and how Ginger wouldn't be "MIA" until weeks later, it's not likely a potential victim would be mistaken for her unless one was miraculously preserved despite how average the weather seemed for the time of the year.
As for the clothing, not sure. Was it listed in the continuity error or goof section?
