They changed the ending because they would have made a Carrie TV show (a ridiculous idea in and of itself, imho), but apparently the ratings of the movie weren´t good enough...

We´ll serve anyone, meaning anyone, and to anyone - at all!

I agree, even knowing why they chose to keep her alive (which was a stupid reason anyways, a Carrie TV Series?!? No, just no). Simply put, Carrie is a tragic character in a tragic story, dialogue and events are all leading to tragedy (even more readily apparent when rereading/watching it). Imo, having Carrie live completely destroys the emotion and integrity of the entire story.

When you're 17 a cow can seem dangerous and forbidden...am I alone here?

You are forgetting she couldn´t remember anything. Only Sue told her what she had done.

You are forgetting she couldn´t remember anything. Only after Sue told her what she had done after the event she found out and was shocked because of it. From this point of view it indeed makes sense. There´s one thing the movies haven´t treated and that is a world, where telekinesis is proven. Stephen King deals with that, though only partially.
The series could deal with that.

There's a lot of things a series could deal with: pain, shame, regret, forgiveness, redemption, transformation. All things I'm writing about in my fan fiction (which I picked up again after a decade.)

In the original novel, Carrie remembered everything. She had exercised her power before the prom. She walked out of the gym in shame and humiliation, and then remembered her power. And that's when she unleashed it to such devastating effect.

She died because her mother struck her a fatal wound that bled slowly but surely. And before she died, she was able to "sound out" Sue, mentally, and find out Sue had meant it for good.

The principal resigned his post. So did Miss Desjardin, who said she could never imagine teaching again.

And then we see a letter from an Appalachian mother to her sister, describing her daughter who has similar power....
