Linen trees
Apparently, Bullock's character thinks linen paper is made from trees. She's a hippie; you'd think she would have eaten some flax seed or worn some linen and eventually made the connection. Eh, city slickers.

If I recall correctly linen paper is simply a softer high quality paper blended with about 20-30% cotton, and used for certain items such as wedding invitations and company stationery paper and envelopes. It's also non-recyclable, which Lucy was right about as well.
