He didn't see it because it never happened. That was about the only scene that was made up to enhance the movie.
Great scene, though.

it couldn't have happened in real life since Jimmy was alone, he wouldn't have known that it changed after he walked away.

The scene was included to better illustrate Morris' underappreciation of his talent as a pitcher. No, it did not happen in real life. But this is a movie, not a documentary. For those that love this film, it is one of the best scenes because it reveals something to the audience that the protagonist is not allowed to know [just yet].
For me, this is the point that I begin to believe, "it could happen, it could really happen." Morris' walking away too early gives the scene greater dramatic effect, and while I know he will eventually find out what is really in his arm,how much time will have to pass for that to happen? And even then, he has walked away believing he does not have a chance and is even foolish for having entertained the idea at all. Those that love the movie want to take Morris by the arm and yell, "Look! You can do it! You can do it!"
Because, sometimes, we just have to believe.

It wasn't that he under appreciation of his talent. He knew he could throw he just didn't realize how hard because he had no way of testing it. Remember he told the catcher that it probably wasn't going as fast as he thought. So when he threw his hardest and the sign only read 76 his suspicion was confirmed that while he was throwing pretty fast it wasn't as fast as he needed it to be to have a shot.
