Jill was not only beautiful but nice! She was just competitive like all women, they see a guy with another woman and they want to steal him rather than find a single guy, its some messed up gene they have left over from 200,000 years of evolution.
Jill was shallow. She may have had good intentions initially when Hal just wanted her because she was hot, but in the end she only wanted him when he was unavailable.
She didn't like him until he was allegedly dating an overweight woman. Besides Hal was in love with Rosemary at that point and he was only being nice by going out to eat with Jill.
So, saying Hal screwed up is wrong. Not only did Hal get the "wonder woman" of his dreams but they were head over heels in love with each other.

maybe they could have dated for a little while but then they would have stopped when they realize they are not a good match
First of all she was not nice - she was possessive and had no good personality traits...except maybe for honesty when she said she wasn't attracted to Hal? Secondly, in real life she would have dumped his ass as soon as he jumped on the Jill train and forgot about Rosemary.
