Well... The "Tiny Asian Acrobat" has to do things he already know how to do, without outside influence. His pass/fail hangs all on his own skill.
Linus/Saul has to influence another person to do something they normally wouldn't. I'd say that's a lot more unpredictable and prone to failure, hence more difficult.
Saul. First he has to spend an extensive stretch playing Liman Zerga, including a lot of time in front of the paranoid Terry Benedict. Then he has to fake a heart attack and finally at 80 whatever years old he is he has to zip line down into the vault and help the guys carry out the money.

I see what you mean about Saul. He had to carry out the whole con as a different person. Then he had to do the zip line down into the vault. There is a tiny scene where it seems that Saul wasn't happy about that zip line down. LOL.
