Roberts does it on purpose - it's in keeping with her character. Tess is with Benedict for the wrong reasons (angry at Danny Ocean) but she suppresses her discontent and puts on a happy face when necessary, probably in hopes that things will get better. However, her less than graceful comportment betrays her (sub?)conscious dissatisfaction.
You can tell it was deliberate on Roberts' part from the scene near the end showing Danny being arrested. When Tess runs to Danny as she realizes she still loves him, she's all of a sudden moving in lithesome harmony. Good nuance and subtlety from Julia Roberts here.
