Why it was cancelled
Maybe because it wasn't as popular as The Simpsons? The movie was a tele-movie.

Comedy Central didn't give a reason but it was cancelled presumably for the same reason any show is cancelled, the ratings & therefore the revenue from commercials, wasn't enough to justify the cost of producing the series. In 2011, the series averaged 2.6 million. In 2012, it was down to 1.7 million.
It's amazing to me that people still need this spelled out for them.
I love the show deep, deep in my heart, but it is done. It had its time, and now that time has passed. Get. Over. It.

It just ran its course. But I still miss it.
shareTbh, and it pains me to say it, but maybe they were justified in cancelling it.
I mean the last 2 seasons were pretty rubbish with only a handful of stella episodes. For chirsts sake we had a singing butt boil in one episode.
I just wish it had ended on a high instead of season 7 :/
Originally it was cancelled because Fox decided they didn't want it before the premiere episode even aired (promoted like crazy leading up to the premiere, including a special about the series, never once promoted in another Sunday primetime ad after the premiere, and every season they held back a few more episodes to air the following season until they finally just skipped a season and let it die). Later it was cancelled because it just never got that magic back after Comedy Central revived it. It's almost like all the stupid meddling that Fox did actually pushed them to make it a better series.
You know what noone tells you about cooking with the Dark Side? The food is really good!
