But, they did manage to go to Venice & do the gondolas & St Mark's. Check.

Lol I agree somewhat. The use of some of Italy's most famous monuments and sites as a "second character" as pointed out in the making of make the movie feel as a promotional video for tourism in Italy. I'm actually really surprised they didn't use the Coliseum lol! Having already been to all these overrated and overcrowded, touristy sites, I think they should have kept the story at the humble, southern Italian town in order to maintain the authentic, carefree vibes of southern Italy.

The director's commentary explains the use of these particular sites & locales, specifically their "metonymic quality," i.e., their natural association with those cities ("Spanish steps = Rome").
More importantly, these are the places Tom Ripley, the character, would visit and arrange meet-ups, because he's a naive but voracious consumer of culture and experience.
