I don't think there is an official answer, but it seems the percentage was quite low. Those remaining were then hunted down by Vader over many years. Some of the books and comics delve into this.

We don't know, that was never stated in the canon.

I think Obi-Wan and Yoda were the only ones known to the Rebellion, but there had to have been others. I like to think that some went to live a hermity sort of life, and worked against Palpatine through the Force. And others said "Fuck it, I was sick of being a Jedi", and either lived regular lives and had the families that the Jedi forbade, or they REALLY broke the mold and devoted the rest of their lives to sex and death sticks.

Are you serious here? These films are all a work of fiction. Nothing was ever filmed or discussed about jedis leaving the life behind to live a regular life.
