Oh sure, almost all the active Jedi were taken out, but shouldn't there be a ton of people who left the Jedi order because they fell in love, or wanted to remain in contact with their mothers? Shouldn't some of them join the Rebellion once it got started, and use what they learned from the Jedi against the emperor?

No, the Jedi aren't forbidden to fall in love, they just can't fall in love and get serious, and remain Jedi. That doesn't mean they can't or don't fall in love, it just means that some may have to choose between love and the Jedi order.
And there have to be those that choose love, particularly during the hormonal years!
That's why I added "and have relationships". I understand they can't help having feelings, they just aren't supposed to act on them. I actually don't know if they can retire to pursue love.
Ah, but in the "Clone Wars" show, which is considered to be canonical, Obi-Wan tells his old flame that he would have "... left the order for you, if... " she'd wanted to take things further! So that does imply that Jedi can leave the Order if they want to get serious or marry, and if it can be done then I assume it IS done.
It also implies that it was an option open to Anakin, even if the possibility of his leaving the Jedi was never raised in the prequels. But I can believe that although he couldn't give up the girl he was hot for, he'd be damned if he'd give up his Jedi powers and position.
"Clone Wars" is a good show. I recommend it to any serious or semi-serious fan. The whole thing is on Disney Plus.
And I don't remember the show bringing up the possibility of Anakin leaving the order to marry, but the show is set after he's already secretly married, he's already made up his mind that he's going to have both his gal and his Jedi powers. That's something that was never explored in the prequels or the TV show - the Jedi believe in detachment, and Anakin is as unhealthily attached to the Order as he is to Padme.
