Why do Anakin's eyes change color

when he goes bad, change back and then change again? Is it a mood thing? Are his eyes always that orange/ red color behind the mask?

I think they're meant to match the emperor's eyes from the earlier trilogy, but I'm not sure why they were only visible in a couple of shots.

Maybe it's to show that the emperor is controlling him, because the Force does give him power over the weak-minded.

his eyes turn yellow to show he's fully embraced the darkside.

It's a sign of the taint of the dark side. Interestingly Dooku's never seemed to go that colour.

Dooku was a lot more political and emotionally-neutral compared to Anakin. I'm not really sure what his motivation was for joining the Dark Side, other than his disapointment in the Jedi.

When you are unable to write a good story you resort to cheap visual tricks like that.
