Why meatloaf? (plus RECIPE)
This question comes up periodically here, along the lines of "was meatloaf that popular in the 1950s?"
Today, looking for a fresh recipe for my traditional Christmas meatloaf main dish I came upon this footnote, a 1958 cookbook " 365 Ways To Cook Hamburger " contains " no fewer than 70 recipes for meatloaf ", according to the author of the blog.
So, if that is a valid indication I'd say meatloaf was pretty popular in the 1950s.
RECIPE: 1 1/2 pounds lean ground beef plus the following chopped finely...
1 medium onion, 2 cloves garlic, 2 celery stalks, 1/2 cup mushrooms, 2 medium carrots, salt and pepper, 2/3 cup fine bread crumbs
Mix all that with 2/3 cup milk and 1 beaten egg, mix loosely (don't pack)
Put in a 5inch X 9inch baking pan and spread on the glaze.
Glaze: 1/3 cup Catsup + 2 Tbsp mustard + 2 Tbsp brown sugar
Bake at 350 degrees for about 1 hour, until the center is 160 to 165 degrees F.
Let sit only 5 minutes then slice and serve.
