why Isla Sorna makes no sense

Hammond says it was used as a place to raise dinos for a few months before them going to Nublar. First off, no way that was cost-feasible more than just having them on Nublar. Beyond that, if that's the case, then why is there a hatching in the original?

I don't mean to be that guy who says "NERRR READ THE BOOK", but it was explained in the JP:LW book.

Basically, the part of the tour they saw was part of an artifice, and in reality they'd be losing loads of babies. It would have taken so many failed attempts to finally get viable eggs that they needed an entire facility which would be churning out "acceptable losses" until they got it right. A more refined version of the process could be done on the Nublar lab, but still a lot of the real work was going on in Sorna.

(I might have misremembered a bit, but that's the basic idea)

That makes sense.

And I did read the book. Once. About two decades ago.

You remembered it correctly.

I always thought the premise of another island of dinosaurs stupid in the 2nd movie since the reason it was done in the 2nd book is that the first Jurassic Park book ended with the military sending jets in to blow up the Jurassic Park island. But since that didn't happen in the first movie there is no good reason to have that premise.
