I have read on a lot of boards that Elizabeth Hurley, who plays Miss Kensington, laughs during a few scenes when she isn't supposed to, just because Mike Myers or someone is doing something funny.
Anyone have examples of when this happens?

Yeah i noticed that too, but i think it is just to show that she kind of likes Austin, but who knows.

When they have just gotten back from their 'night on the town' she laughs madly when Austin does the walking down the stairs, escalator, canoe gag behind the couch after playing Twister.

They filmed the 1960s footage at the time, to make it look authentic. Then waited 30 years and filmed the 1990s footage. The two lead actors never actually met, they were filmed separately three decades apart and the magic of movie editing made them look like they started together.
True story. (That I just made up.)
