And given the fact they were HIS mushrooms, taken from a bag of contraband that Alice found in his bag, it's pretty obviously insinuated he's a routine user of such things and is probably accustomed to the taste of psychedelic mushrooms. I would guess someone who'd eaten them on many occasions likely wouldn't notice the taste or smell of them as being distinct from any other type of mushrooms, without knowing they were there, especially if they were cooked and made into a sauce.
