At the bakery, why did Albert remind the baker that the cake welcoming Val is to say: "To Piglet, from Auntie Albert."

If Albert believes that he is Val's mother, why did he downgrade himself to Auntie?

I don't think Albert thinks of himself as Val's mother. This is indicated when Albert says to Armand "The truth is you've never liked sharing your son with me" or something to that effect. I think Albert did love Val as if he was his own son but didn't want to overstep his boundaries. That's why he's so touched at the end when Val introduces him as his mother.
