Burning apron

When Tucci leaves the restaurant ostensibly to pick up the thieves' market booze but actually also to have a quickie with one of his lovers, he drives by the rival restaurant (or back thereof, can't recall) and sees a chef whose apron is burning. I can't connect this with the story line. Any ideas?

It is a strange shot- my guess would be it's to show how incompetent the cooks are at the other restaurant.

The darker interpretation could be that Ian Holm did it as a punishment or prank, as you see him follow him out the alley.

I totally agree with you on the "incompetence" bit. I think that's right on. Good man.

(Spoilers) What you were seeing was Pascal literally firing his chef. He did so because he was expecting to hire a new one in the next few days. I don’t remember the exact line from later in the film, but it was something like this : “he’s a good investment, your brother. You too.”

I agree. He was literally "firing" a chef. It showed what a bastard he was at heart.
