The Eyes

I enjoyed this movie but there was one thing I didn`t quite get.
I apologise if this has been asked before but what was with the discrepancy with the angels sometimes having eyes and other times not?
I`m referring to the beginning when Simon has no eyes, then later on, on Earth he has them.
Also the angel who attacks Simon and gets thrown out the window ( I think his name was Uziel?) has no eyes, yet Gabriel has a perfectly normal set of eyes.
What is the reason for this?

I think the "no eyes" look is to show how they are really supposed to appear, but then they can change them to seem human

The grey nail polish I think is also to show their angelic "otherness"

It is said that the eyes are the window to the soul. now while Angels do not have souls, it could be that when they came to earth and take human form they add eyes to pass among them, Uziel may not have made the eyes since he was only there to find Simon, which was fairly quickly and assumed to be a quick trip, while Simon and Gabriel were their searching for the soul and were meant to be on earth longer. But also when the Angels die they loose their eyes, which could be their essence or being taking on the human form. When Uziel dies, his eyes are gone, Simon doesn't die until Gabriel pokes his eyes out, and when Lucifer rips out Gabriel's heart, you see his eyes are gone.

Sorry, two's company, and three's an adult movie.
