What did Banderas say in Spanish to the female vendors? They seemed rather shocked, or was it just that he actually knew and was Spanish.

They were shocked because they though he didn't know Spanish. After Bain gets distracted he says:
Bain: "Hail purest Mary..."
Lady 1: "...conceived without sin"
Lady 2: He's talking in Spanish!
Lady 1: You speak Spanish?
Bain: Perfectly, sweetheart.
"Remember my username...you'll be screaming it later"
