Good questions. It's been a while since I've seen the movie, but I can think of a couple of possible answers.
When Cole first saves Mason from the truck, he pretends to show concern by saying something like "Don't you have a wife, a family? SOMEONE who cares about you??" He's really just prying to find out if anyone will miss Mason. When he gets the answer of "NO!", that's when he offers Mason the job of a guide. Mason even says "I don't know *beep* about the wilderness!" If I remember right, Cole never says the supposed groups Mason will be leading have any hunting experience either, just that they need some help. Then he brings up the pay and Mason says "What kind of pay are we talking??" Remember, he's also been out of work and homeless for some time. So I would imagine ANY job at this point would help. I don't have much hunting experience but if I was homeless and someone offered me that position, I'd take it. That's what Burns and Cole pray on, the desperation.
As far as sleeping in his clothes and boots, I don't remember that exactly. I do remember he was partially dressed but I also remember them all throwing clothes at him and yelling "Get up! Put that *beep* on!" and so forth.
I guess Mason figured Burns and Cole would be the head guides and he'd just be their assistant/gofer, and also get on-the-job training.
