Then why build a bathroom?

I'm guessing that was more for the maintenance workers, or eventually bathroom access would be opened to regular visitors once the park was much more refined, and well after the early access tour we saw in the film.

Very true but the locking mechanisms they were going to install would pretty much defeat the purpose

I imagine the cars could be unlocked in case of emergency, if someone has to take a dump, etc. Considering they had cameras in the vehicles, I'm guessing some officials would be watching for such an occasion and could unlock the doors remotely.

Not if there's a 10,000 Volt electrified fence between your bathroom and the dinosaur!
