Because Sam Raimi doesn't care about continuity and one makes for a better ending whereas the other makes for a better opening.

Because the only sure thing about the evil dead trilogy is "Continuity be damned. Making sense? What sense? That's not what we're here for!"
I guess that beginning is more dramatic than if Ash was treated as a hero from the start, this way he has to prove himself and that adds some extra tension. Also, being chained, whipped, kicked, punched and thrown in the well with the deadite... You wouldn't do that to a hero, right? The only apparent constant in Ash's miserable existence is that he gets abused a lot and here's a great opportunity to make his life just a little bit more miserable.
The timeline has changed.

I'm glad they changed the beginning of AOD. having Ash go from bad to worse situation just seems to fit his unluckyness.
It's a theory.
Ash is possessed at the very end of his battle. The Book of the Dead is also lost forever (burned), and the Kandarian Demon cannot use it anymore in order to conquer the world of the living. a select elite of Raimanders perform the ritual and establish the Realityquakes system.
Since the creators of the Book of the Dead are long deceased and turned to dust,
I'd change it to the Kandarian demons altering the timeline
They are the Dark Ones. They are immortal.
