Well, since he was visible to us, I don't think it should be regarded as a big goof that we could also see his shadow.
Yeah, the movie is truly great.
Him being visible to us is breaking through the 4th wall so to speak, it gives us a realistic view of what Nick would look like had he not been in the accident, it keeps us from seeing Nick in the beginning and just objects moving around the rest of the film.

Remember this was made in 1992 and at that time the technology to believably remove tributary objects from film such as shadows didn't exist (sure they could use blue/green screens but it would look crappy) Not to mention most of the story is told from the third person narrative... and Nick is a somewhat unobservant, irreverent and goofy character so you could disregard it as him not being able to (or not caring too) omit the shadows from his memory.
