First of all when she first met Dracula he was a total creeper then after he tried to bite her for all she knew Dracula was attempting to rape her. She seemed to forgive him quite quickly for that.
Remember Mina is the reincarnation of his beloved wife Elisabeta. He is obsessed and madly in love with her. Elisabeta loved him just as passionately that she took her own life upon reading the false letter of his death. This is a theme of soulmates. When Vlad is acting intense with her, yes she is scared but she is also drawn to him because Elisabeta knows and loves him. He intrigues her. When he loses himself and forces her onto a sofa in the theatre trying to not bite her. Immediately something clicks in her and she said
"god, I know you". He then caresses her face and she leans into his touch.
The wolf then scares everyone including Mina. Dracula calls her over and together they pet the wolf. Mina is actually touching a wild beast. A metaphor for a beauty and the beast love. The wolf is tamed, Vlad is tamed. He then tells her there is much to be learned from beasts. That is insight into his character. It's not black and white, he is not a creeper and an attempted rapist. He does terrible things but he has humanity. Mina is the reason that humanity is there. He loves her so much and she is to never fear him.
The Dracula and Mina romance is intense and very erotic. That scene alone is full of sexuality and passion. Gary is so fantastic because he really does portray a man who is finding his soulmate again.
"see me, see me now" The eye contact, the caressing her, especially as she pets the wolf. He shows how Vlad could love so intensely and lose himself to evil over her death. Watch that scene again. He does not take his eyes off her, right up until he drops her home and sees her to the gate. Even then they are still staring at each other. She wants him just the same but Mina is not as experienced and she's probably shocked and confused of the depth of her feelings for this strange man.
Hell he confesses to her in bed about being Dracula and killing Lucy. She beats him but still tells him
"God I love you, I do".I don't think betrayal comes in to it for her. Elisabeta is awake in her and longing for Vlad. Love rules her.
