Lambs by a mile. 7 is a bleak as hell borderline horror, Lambs is a more rounded piece with a very human centre in Clarice, who escorts us to the horrors of Bill’s Dungeon and Lecter’s mind. Nothing in 7 comes close to those Lecter scenes, which are chilling, intelligent, funny, mesmerising.
Demme is able to penetrate character like no other director, getting the actors to look directly into the lens, with detailed and nuanced performances. Fincher’s more of a style-monger, especially back in 1995.
Both are great films but Lambs is on another level.
I love both but I think Lambs is a bit better. It's a little more complex and memorable for its characters, music, acting, dialogue, and as said above doesn't have the overly depressing tone running through it.
