I think knobby buns are buns that you puts twists and lumps in so it looks like they have knobs (bumbs) all over them when they bake. You can grab pieces and tear them off as you eat them.

As for the recipe, it was just something silly to put in the credits like,
"Nuns not in the movie"
(lists names)

or

"Answer to tonight's scrambled movie title:"
"T2"

(Not sure if that one was in the first or second movie, but I found it hilarious.
