i think that thats just a name that bill gave grey whilst they were pretending to be a married couple giving the speech at the wedding.
shareActually, Walker calls Grey "Doris" when they are at 'beef' restaurant with Bill and Sue. He does this because he doesn't want Bill and Sue to know her real name so he just makes up one. I've watched this movie since I was a kid and I only understood this part after watching it about a year ago.

Grey's boyfriend uses it because he's afraid of them knowing her real name because of their shabby appearance (and because they are strangers - sort of like you don't randomly give out your real name online, you make up a fake fun one). Bill later follows suit during the wedding toast because they are crashing a wedding and they use the fake name because they aren't supposed to be there!
