shareI think McCarthy would do well but I also think it would be too close to what Bates was able to accomplish and would come off as falling short, she looks too similar and because of that, we the audience would just see McCarthy emulating Bates, and that never works out well in film, especially in remakes.
I think for the sake of variety, Catherine Keener would be more suited to making the character her own and could do just as well as Bates did, given the writing was competently done.
She was the first I thought of also! (McCarthy.)

Rosamund Pike. She looks nothing like Annie from the original but she has a cold distant look to her. I think she could pull off a lonely super fan who is psychotic
