Why didn't Kathleen leave Raymond after he hit her in the restaurant?




I sure would have. I know he was under a lot of pressure, but that was just wrong and had me changing my opinion of his character.

Understandable, but there's more to their relationship than just him losing control over the thought of Kathleen having an affair with Peck. They seem to have a strong, solid, and passionate marriage, and Avila hitting her was out of character for him and not a normal occurrence. Obviously, their marriage was under extreme duress and Peck was the culprit. He purposefully messed with Avila's head in order to cause rift between the couple. Both Kathleen and Raymond realized this the next day after the incident, and that's when they make up.

Exactly, chickados.
Their relationship is extremely passionate and they are both possesive of one another. As you said, him striking her is extremely out of character for him, and as his wife she would know something is wrong. She pretty much said so in the scene where he comes home after sleeping at his cousins's club "something's wrong and you're not telling me jack shyt...I was worried about you!!!" Add to that her bizarre meeting with dennis peck and her piecing together that Peck is the guy raymond is obsessively investigating and well, its understandable why she just doesnt toss her marriage away and demands an explanation for Ray's crazed behavior.
