I haven't seen this movie but it featured in a recent empire article where they showed a picture of and talked about a scene where Gambon is forced by gerogina to eat the dick of a roasted corpse that used to be her lover after he killed him.

My question is, if this is her getting revenge surely the whole process of having to serve up the dead body of someone she used to love or at least was intimate with and then watch her husband eat his penis would be far more traumatic for her than it would be for him?

Earlier in the film, Albert vows to eat Georgina's lover if he were to find him. He finds him and instead he and his henchmen shove his books down his throat until he suffocates to death on the thing he loves and dies. Georgina sees that he has not fulfilled his vow so she gets the cook to roast up his body and then forces Albert to eat a piece of his corpse, after which she shoots him.

He doesn't eat the penis. She suggests it but he choses a morsel from higher up. That was fine with me.

I don't think that the scene could have been any more traumatic for her. She had the worst thing happen to her in a long line of bad things. Really, one can view this as her mind just snapping completely. She only had one thought in her mind at that point, and that was pure, cold revenge.

That paragraph only barely touches on what the final scene builds upon. As someone else suggested, you'd have to watch the movie to watch everything unravel. From the very beginning, you see her life in shambles. Then, she finds a candle in the darkness, only to have it snuffed out. That, I think, just sent her over the edge, and seeing the result only intensified her anger.

Reducing him to cannibalism, literally making him eat his own words, rendering him speechless, sickening him, then killing him in plain sight of those he’'d abused.

In a tale bubbling over with both genteel and brutal mastication Georgina manages to take the last bite.
