How come Emma keeps calling Teaspoon "Mr. Spoon" when everyone else knows his last name is Hunter? At first I thought it was a joke but she does it in a lot of episodes, and a lot of times it's in a serious situation.

Emma calls Teaspoon "Mr. Spoon" as a term of endearment. Like calling an Uncle Uncle Stephen. <(My uncles name)or Lou, Lulabelle. It's probably meant to mean that Teaspoon has a close bond with Emma that's of a fatherly or uncle type relationship. You could also call it a nickname of sorts. I know thick as mud, right? :P Well I hope I helped. :)
No, that's what I thought, too, but there are a couple of times when she's really mad and says something like, "You boys leave Mr. Spoon alone!" in a really nasty voice. Not a time when you'd want to use an endearment. The first time, it sounded like a cutesy nickname, but she just kept doing it and she always called him that for the whole rest of season 1, never calling him Mr. Hunter. ?

I think it was just a pet name she had for him. It could also be interpreted as Mr T. Spoon. Emma thought of Teaspoon and the riders as her family so she always spoke to them in an informal manner.
Or, it could be that she had started out calling him "Mr. Hunter" when he told her to call him "Teaspoon", so they compromised with "Mr. Spoon". Uh-oh. Not a word you want to hear in this house. Catch ya on the flip side.
