ok, so I understand that Ed was connected to Pumpkinhead. but the question is was he turning into pumpkinhead? and if so, was pumpkin head turning into him?

The witch said something about a final payment, that's what makes dealing with Pupkinhead a double edged sword; it kills those the offended wants,but they feel the pain, horror and fear of their victims, and then eventually Pumpkinhead burns up when the job is done, and the offended becomes the next Pumpkinhead's body.
I imagine that if he didn't try and save the kids, Pumpkinhead would kill everyone, come back to Ed, looking strangely similar, kill him to complete the ritual, burn up and then have Ed's corpse transform so the witch could bury him.
