In the first half hour, the preppy dude (forgot his name) tries to score three bulls-eyes after drinking three shots of tequila. It's a bet with this big guy for $50. Now, I know that big guy, but I missed his name. Could anyone tell me who he is, either in the film or in real life?

Isn't he in the cast overview here on IMDB? At the bottom of the list you can click on more... there are a couple of names there, maybe he's one of them.

Somebody named Marc A. Vitale played "Rocky" in Mystic Pizza. Which character was that? Mystic Pizza is the only movie in which Marc Vitale has appeared.
i noticed the guy, too. his arms are enormous. no clue on imdb as to who he is, though.
