The hair stuff the convicts use ?. I'm not sure what you mean. The biker did know about them escaping but how did it lead him to Cage ?.
Right after they break out we see them greasing up their hair at a gas station rest room (with unrelated Dr. Stangelove graffiti on the door). In a later scene Smalls finds the place, and sniffs the remains of the hair-grease, which he tracks to H.I.'s mobile home.

Now that I recall. Yes you're correct. He comes in to a restroom and sees a white tub next to the mirror. And his nose got the vibe.

It's okay. I thought the direction of the movie was unique. I liked the close up frames of the patrol car lights. Very stylish
