I think the first episode that she is a slut deep down inside was the "Poke High" 3/3 when she was fantasizing about the football players at the game.

I was just watching that episode now and I assume you were as well. Marcy has pretty much always been a closet freak. Lady in the street, freak in the you know what. I think it was just better hidden with Steve, because they're both reserved and constantly concerned about her image. That all went out of the window when she got her boy toy, Jefferson. He pretty much only existed as a trophy and for sex. Marcy has many moments before this episode.

See You in Court was the first episode where we see the end of Steve and Marcy's feelings for each other go down the tubes.
It really skyrocketed when Steve left her though. She turned into a total Peggy type hornball then. I agree with you that deep down inside it was always lurking there the whole time.
But this one was the first time it was really brought out to us.

It was definitely hinted at when she was with Steve but it became more evident when Jefferson came along. Granted, she still tried to hide it but we'd see more (like sex toys and stuff). I think that had more to do with the show becoming more over-the-top with time rather than some change in Marcy's character.
